cinnamon oatmeal breakfast smoothie

This is a wonderfully different way to get your oatmeal in the morning. The key to making these taste really good is to make sure they’re super cold and that they’re blended until smooth and frothy. My recipe makes enough for two smoothies.

1/3 cup old fashioned, rolled oats (not quick-cooking, and not steel cut)

2 cups milk

1/4 teaspoon cinnamon

2 to 3 Tablespoons brown sugar

1/2 teaspoon pure vanilla extract

handful of ice

more milk for thinning (if needed)

Place milk, cinnamon and oatmeal in a small saucepan. Bring to simmer and stir constantly for 10 minutes. Remove from heat and bring to room temperature. Add the brown sugar and vanilla. Stir. cover and refrigerate for two hours. Place in the bowl of a blender, add milk to make the smoothies as thin as you like. Blend in blender, along with a handful of ice, until very smooth. Pour into glasses and serve immediately.
