~ ergo tempranillo rioja 2008 ~

A couple nights ago I was practicing what my lovely over at Living the Blue Collar Way calls “Zen Cooking.” It’s kind of strange for me to get all the way to the time that I would usually be cooking a supper I had planned five days prior, and not know what the heck to make for dinner. I’m a planner. There, I said it.

Anyhoo, I started excavating the freezer for something fast and easy and found: 1/2 large ziploc bag full of hamburger wild rice hot dish, 1/2 bag of frozen corn, 1/2 bag of frozen peas and carrots….so I threw them in a big stock pot and added a cup of chicken broth, a cup of red wine, a drizzle of cream sherry, a spoonful of mincemeat, garlic powder,  onion powder, parsley, a packet of dry brown gravy mix and a sauteed apple and sauteed onion. I let the mixture reduce, put it in a large casserole pan, covered it with mashed potatoes, and baked it in a 350 oven for about an hour. It got rave reviews, this little hodge podge shepherd’s pie…and it was wonderful with this Ergo Tempranillo Rioja.

What is the best meal you’ve thrown together that you just sort of made up along the way?
